Fit Friday – Herbalife Pumpkin Cookies and Cream Dip
First of all, let me humbly say that this dip I created is simply delicious!!! Okay, maybe that wasn’t humble. But it’s the truth. It tastes like fall, so save the recipe to impress your friends and family with a light but tasty side dish during the holidays. Or you can get over the stigma of pumpkin being only for fall and just go ahead and buy a can like I did.
I ate this with graham crackers, but you could do teddy grahams (chocolate, cinnamon, or regular), shortbread or gingersnap cookies, nilla wafers…you could spread it on bagels or toast…the possibilities are endless! In fact, typing this is making me want to go try the rest of the dip with other things…but I’ll refrain until tomorrow…
I made this with Herbalife Cookies and Cream Formula 1 Mix, but you could probably substitute the same amount (3 Tbsp) for another powder like diet/no-sugar added cocoa mix (which would make this dip even lower in calories). It will have a much stronger chocolate taste but still good I’m sure.
Herbalife Pumpkin Cookies and Cream Dip
- 2 scoops (Herbalife Cookies and Cream Formula 1 Mix (see above substitution note)
- 1/4 cup Greek CreamCheese and Greek Yogurt (you could use 1/3 less fat cream cheese – add 5 calories per serving.)
- 1/2 cup canned pumpkin
- 1/2 cup Cool Whip (I used french vanilla, but light cool whip would be 5 less calories per serving.)
- Cinnamon (I didn’t add this, but it wouldn’t hurt…after all, it’s pumpkin we’re talking about.)
Mix the first 3 ingredients together (may use electric mixer). Stir in Cool Whip. If it’s too stiff after refrigerating, just add more cool whip and adjust your calories. Or don’t. Nobody will know. 🙂
