Fit Friday – Nearly Sugar-Free Chocolate Cake in a Mug with Frosting!

Lately, I’ve been loving trying out different healthy dessert recipes – yes there is such a thing.  In particular, I’ve been trying different healthy “cake in a mug” recipes since there are several out there.  This one I’ve made twice now, and I really like the texture.  It’s a good one-serving size, too.  The only thing is you really do need some sort of cool whip or icing because the cake itself isn’t very sweet.  I made my own sugar-free cool whip frosting that was great on it (see below)!

Okay, first the chocolate cake:

chocolate-cake-for-one_thumb1Delicious-looking, right?  Just click on the picture to take you to the original recipe and blog – she has LOTS of low-calorie/healthy desserts there!  The only thing I did  differently is that I used all Splenda instead of part sugar and a Tbsp of applesauce for the oil as she mentions to make it essentially sugar-free and fat-free.  With splenda and no oil, this is only 106 calories, 2 grams of fat, and 1 gram of sugar!  Oh, I’ve also tried this with adding a Tbsp of powdered peanut butter and an extra Tbsp of almond milk – awesome!

Now, for my Sugar-Free Chocolate Cool Whip Frosting!

You can use whatever kind of Cool Whip you want and just change the calories/sugar accordingly – it’s not that much difference in small portions.

For 1 serving:

  • 3 Tbsp Sugar Free Cool Whip
  • 1 Tbsp Hershey’s sugar-free chocolate syrup (By the way, in case you were wondering, this stuff isn’t so great by itself or in milk, but it’s good on ice cream and with other things.)
  • 1 tsp Hershey’s unsweetened cocoa powder

Mix all ingredients and pour/spread onto slightly cooled cake.  Eat right away before it melts!  This frosting is only 41 calories and zero sugar!  Which makes the total cake under 150 calories!  I look forward to trying other variations too, with different extracts (almond, caramel), maybe some quick oats, a little mashed banana or diced strawberry, cinnamon, pumpkin puree, that Herbalife apple fiber drink mix, maybe some different sugar-free pudding mixes…  Have fun!
