Fit Friday – Fiesta Chicken Salad and Copycat Wendy’s Wild Berry Tea
Another salad recipe with a Mexican flare this time! Sorry…I really do love salads! (The picture is before chips and dressing.)
Fiesta Chicken Salad with Black Bean Relish
- Salad Blend (I used a lettuce blend with carrots and radishes and added chopped red bell pepper, cucumbers, and tomatoes)
- 1 oz. grilled chicken (I just cooked mine in a skillet with Pam and seasonings)
- 1/4 cup Mexican cheese blend
- .5 ounces tortilla chips, crumbled (about 4-5 chips)
- 1/4 cup black bean and corn relish (easy recipe below)
- 2 Tbsp Light Ranch (**see below for alternative dressing)
Black Bean and Corn Relish
- 1/2 cup Black Beans, drained and rinsed
- 1/3 cup Corn kernels off the cob (you could used canned)
- 1/4 cup Red onion, finely chopped
- 1/4 tsp Red wine vinegar (I didn’t measure this, so just add to taste)
- Cumin and Seasoning blend (again, add to taste)
**For the dressing, you actually don’t need the whole amount because of the relish. For it to be even lighter and spicier, I’ve even done 1 Tbsp. Light Ranch or Highland’s Jalapeño dip mixed with 1 Tbsp Salsa.

Copycat Wendy’s Wild Berry Tea
I was actually able to somewhat duplicate Wendy’s Wild Berry Tea without all the calories and sugar!!! Now, my measurements are just guestimates, so just do it to taste.
- 1 glass of Unsweetened Iced Tea
- Master of Mixes – Lite Strawberry Daiquiri / Margarita Mixer (this is only 20 calories and 2 grams of sugar for 5 ounces – you’ll use half at most for 1 glass)
- Splenda ( 1 – 1 1/2 tbsp for a glass)
